Chocolate Thumbprint Cookies

Ingredients

  • 1/2 cup unsweetened cocoa powder

  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate ganache for filling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Beat in egg and vanilla until well combined.
  5. Gradually mix in the dry ingredients until a dough forms.
  6. Scoop tablespoon-sized portions and roll them into balls.
  7. Place the balls on the prepared baking sheet and create a thumbprint in the center of each cookie.
  8. Bake for 10-12 minutes and let cool slightly on the baking sheet.
  9. Fill each thumbprint with chocolate ganache and allow to set before serving.

Notes

Avoid overmixing the dough for a tender texture. Store in an airtight container at room temperature for up to 5 days.
