  • 1 cup buttermilk
  • 1 large egg

  • 1/4 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese
  • A splash of milk (adjust for consistency)

Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the buttermilk, egg, and melted butter until combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).
  4. In a small bowl, mix the cinnamon and brown sugar together to make the cinnamon swirl.
  5. Heat a large non-stick skillet over medium heat. Pour 1/4 cup of pancake batter onto the skillet.
  6. Immediately drizzle a small amount of the cinnamon swirl mixture over the batter. Swirl gently with a toothpick or skewer.
  7. Cook until bubbles form on the surface (about 2-3 minutes), then flip the pancake and cook until golden brown (another 2-3 minutes).
  8. For the cream cheese glaze, combine the powdered sugar and cream cheese in a bowl, adding just enough milk to achieve a smooth, pourable consistency.
  9. Serve the pancakes warm, generously drizzled with the cream cheese glaze.

Notes

Keep batter lumpy for fluffier pancakes. Store leftovers in an airtight container.
