Description
Crunchy, lightly sweet, and warmly spiced candied pecans that fill the room with the comforting aroma of cinnamon.

- 1 egg white
- 2 teaspoons water
- 1 teaspoon vanilla extract
- 1 1/2 cups whole pecans
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 tablespoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 300°F (150°C). Line a baking sheet with foil and spray lightly with cooking spray.
- In a medium bowl, use a hand mixer to beat the egg white and water until a stiff peak forms.
- Add the vanilla and mix until incorporated.
- Add the pecans to the bowl and toss until they are well coated with the egg-white mixture.
- In a small bowl, combine the granulated sugar, brown sugar, cinnamon, and salt; mix well.
- Pour the sugar mixture over the coated pecans and stir until the pecans are evenly coated.
- Transfer the pecans to the prepared baking sheet, spreading them into a single layer.
- Bake for 15 minutes, then remove and stir the pecans so they roast evenly.
- Return to the oven and bake for another 12–15 minutes, watching carefully in the final minutes so the sugars don’t burn.
- Remove from the oven and immediately transfer the pecans to a fresh piece of aluminum foil (or parchment) to cool and set. Break apart any large clumps once cool.
Notes
Store in an airtight container for up to 7 days at room temperature. Refrigerating can soften the coating.
