- 1/4 cup honey or maple syrup
- 3 cups Rice Krispies cereal
- 1 cup chocolate chips (semisweet or milk chocolate)
- 1 tablespoon coconut oil (optional)
Instructions
- In a large bowl, mix together the peanut butter and honey (or maple syrup) until smooth and well combined.
- Stir in the Rice Krispies until fully incorporated and the mixture holds together.
- Form the mixture into small, bite-sized balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
- Melt the chocolate chips with the coconut oil in 20–30 second bursts in the microwave, stirring between intervals, or melt gently in a double boiler until glossy and smooth.
- Dip each peanut butter ball into the melted chocolate, using a fork to lift and let excess chocolate drip off, coating evenly.
- Return the coated balls to the baking sheet and refrigerate for about 15–30 minutes, or until the chocolate sets.
