Ingredients

  • 1 cup peanut butter (smooth or crunchy)
  • 1/4 cup honey or maple syrup
  • 3 cups Rice Krispies cereal
  • 1 cup chocolate chips (semisweet or milk chocolate)
  • 1 tablespoon coconut oil (optional)

Instructions

  1. In a large bowl, mix together the peanut butter and honey (or maple syrup) until smooth and well combined.
  2. Stir in the Rice Krispies until fully incorporated and the mixture holds together.
  3. Form the mixture into small, bite-sized balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  4. Melt the chocolate chips with the coconut oil in 20–30 second bursts in the microwave, stirring between intervals, or melt gently in a double boiler until glossy and smooth.
  5. Dip each peanut butter ball into the melted chocolate, using a fork to lift and let excess chocolate drip off, coating evenly.
  6. Return the coated balls to the baking sheet and refrigerate for about 15–30 minutes, or until the chocolate sets.
  7. Serve and enjoy your delicious treats!

Notes

Chill the formed peanut-butter balls briefly before dipping to help them keep their shape. Feel free to experiment with mix-ins or coatings!
