- 1 cup coconut flour
- 1/2 cup coconut oil (melted)
- 1/2 cup honey or maple syrup
- 4 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the melted coconut oil, honey (or maple syrup), and vanilla extract until well combined.
- Add the eggs one at a time, mixing thoroughly after each addition.
- In another bowl, combine the coconut flour, baking soda, and salt; mix well.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Scoop out tablespoon-sized amounts of dough and place them on a baking sheet lined with parchment paper.
- Flatten the cookies slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
