Coconut Flour Cookies

Ingredients

  • 1 cup coconut flour
  • 1/2 cup coconut oil (melted)
  • 1/2 cup honey or maple syrup
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the melted coconut oil, honey (or maple syrup), and vanilla extract until well combined.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. In another bowl, combine the coconut flour, baking soda, and salt; mix well.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Scoop out tablespoon-sized amounts of dough and place them on a baking sheet lined with parchment paper.
  7. Flatten the cookies slightly with the back of a spoon.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be stored in an airtight container at room temperature for up to 3 days, refrigerated for up to a week, or frozen for up to 3 months.
