Ingredients

  • 1 cup coconut flour
  • 1/2 cup coconut oil or butter, melted
  • 1/2 cup honey or maple syrup
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the melted coconut oil (or butter), honey (or maple syrup), and vanilla extract.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the coconut flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until well combined, being careful not to overmix.
  6. Scoop tablespoon-sized amounts of the dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden. A great indicator is when you see slight browning on the edges.
  8. Allow the cookies to cool on a wire rack before enjoying!

Notes

Avoid overmixing the dough to maintain a light texture. Store in an airtight container for up to 3 days.
