- 1 lemon — zest and juice

Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the fillets in a single layer.
- In a medium bowl, whisk together the coconut cream, lemon juice, lemon zest, olive oil, and minced garlic. Season with salt and pepper to taste.
- Arrange the cod fillets in the baking dish and pour the coconut lemon cream sauce evenly over them, ensuring each fillet is lightly coated.
- Bake for 20–25 minutes, until the cod is opaque throughout and flakes easily with a fork.
- Remove from the oven and let rest for 2–3 minutes. Garnish with chopped fresh parsley before serving.

For lighter alternatives, consider using light coconut milk or Greek yogurt. Adjust seasoning based on lemon acidity.
