Coconut Lime Fish Soup


Description

A tropical-inspired soup with creamy coconut milk, zesty lime, and tender pieces of fish and aromatic vegetables.


Ingredients

  • 1 lb white fish (like cod or tilapia)
  • 1 can (14 oz) coconut milk
  • 4 cups fish or chicken broth
  • 1 lime (juice and zest)
  • 1 onion (sliced)
  • 2 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 1 red bell pepper (sliced)
  • 1 cup mushrooms (sliced)
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion, garlic, and ginger until fragrant, about 3-4 minutes.
  2. Add the bell pepper and mushrooms and cook for another 5 minutes.
  3. Pour in the broth and coconut milk, and bring to a boil.
  4. Add the white fish and let it simmer until cooked through, about 5-7 minutes.
  5. Stir in lime juice and zest, soy sauce, and fish sauce.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

Do not overcook the fish! Fresh herbs elevate the flavor; add freshly chopped cilantro or green onions right before serving for freshness.
