- 1 lb white fish (like cod or tilapia)
- 1 can (14 oz) coconut milk
- 4 cups fish or chicken broth
- 1 lime (juice and zest)
- 1 onion (sliced)
- 2 cloves garlic (minced)
- 1 inch ginger (grated)
- 1 red bell pepper (sliced)
- 1 cup mushrooms (sliced)
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion, garlic, and ginger until fragrant, about 3-4 minutes.
- Add the bell pepper and mushrooms and cook for another 5 minutes.
- Pour in the broth and coconut milk, and bring to a boil.
- Add the white fish and let it simmer until cooked through, about 5-7 minutes.
- Stir in lime juice and zest, soy sauce, and fish sauce.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
Do not overcook the fish! Fresh herbs elevate the flavor; add freshly chopped cilantro or green onions right before serving for freshness.
