- 2 cups corn (canned, drained, or thawed frozen corn)
- 1 cup cream cheese (softened)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced green onions (scallions)
- 1/2 cup diced jalapeños (optional; remove seeds for milder heat)
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the cream cheese and sour cream until smooth.
- Stir in the corn, shredded cheddar cheese, green onions, jalapeños, garlic powder, chili powder, salt, and pepper.
- Mix well until all ingredients are evenly combined.
- Transfer the mixture to a serving dish and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature with tortilla chips, pita chips, or fresh vegetable spears.
Notes
For a lighter version, swap Greek yogurt for sour cream, or use reduced-fat cream cheese and cheddar. Can also be baked for a warm dip.
