Creamy Cajun Chicken and Rice Bowls

Description

A comforting dish featuring tender chicken in a velvety Cajun cream sauce served over fluffy rice.

Ingredients

Scale
  • 2 chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Pat the chicken breasts dry and season both sides generously with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat until shimmering. Add chicken and cook until golden brown and cooked through, about 6-7 minutes per side.
  3. Remove chicken to a plate to rest, then slice against the grain.
  4. In the same skillet, reduce heat to medium-low and pour in heavy cream, bringing to a gentle simmer while scraping the browned bits.
  5. Stir in Parmesan until melted and smooth, adjusting seasoning to taste.
  6. Serve sliced chicken over cooked rice, drizzling with the creamy sauce and garnishing with parsley.

Notes

For a lighter option, substitute heavy cream with half-and-half or coconut milk. Add vegetables for extra nutrients.
