- 1 lb chicken breast, diced
- 1 cup long-grain rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Green onions for garnish
Instructions
- In a large skillet over medium heat, heat the olive oil until shimmering.
- Add the diced chicken, season with salt, pepper, and Cajun seasoning. Cook until browned and fully cooked, about 6-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the onion, bell pepper, and minced garlic. Sauté until softened, about 3-4 minutes.
- Stir in the rice, ensuring it’s well-coated. Pour in the chicken broth and bring to a boil.
- Reduce heat, cover, and let simmer for about 15 minutes or until rice is cooked and liquid is absorbed.
- Add the heavy cream and cooked chicken back into the skillet. Stir to combine and cook for an additional 5 minutes.
- Remove from heat, garnish with chopped green onions, and serve warm.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in individual portions for up to 3 months.
