Creamy Cajun Chicken & Rice

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Green onions for garnish

Instructions

  1. In a large skillet over medium heat, heat the olive oil until shimmering.
  2. Add the diced chicken, season with salt, pepper, and Cajun seasoning. Cook until browned and fully cooked, about 6-7 minutes. Remove the chicken and set aside.
  3. In the same skillet, add the onion, bell pepper, and minced garlic. Sauté until softened, about 3-4 minutes.
  4. Stir in the rice, ensuring it’s well-coated. Pour in the chicken broth and bring to a boil.
  5. Reduce heat, cover, and let simmer for about 15 minutes or until rice is cooked and liquid is absorbed.
  6. Add the heavy cream and cooked chicken back into the skillet. Stir to combine and cook for an additional 5 minutes.
  7. Remove from heat, garnish with chopped green onions, and serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in individual portions for up to 3 months.
