Instructions
- Cook the gnocchi according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and add minced garlic, sauté for about 1 minute until fragrant.
- Add fresh spinach to the skillet and cook until wilted, about 2–3 minutes.
- Pour in the heavy cream and stir to combine; bring to a gentle simmer.
- Add cooked gnocchi and crumbled feta cheese; stir gently to combine and heat through.
- Season with salt and pepper to taste; serve immediately, topped with grated Parmesan if desired.
Notes
Use high-quality feta for better creaminess and tang. To lighten the dish, consider half-and-half instead of heavy cream and lower-sodium feta for reduced salt content.
