  • 1 lb salmon fillets
  • 2 tablespoons olive oil

  • 1 cup heavy cream
  • 1 lemon (zested and juiced)
  • 1 cup spinach (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the orzo pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, then add them to the skillet, cooking for about 4-5 minutes on each side until cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream, lemon zest, and lemon juice, stirring to combine. Bring to a gentle simmer.
  5. Add the cooked orzo and spinach, mixing well until the spinach wilts.
  6. Flake the salmon into large pieces and gently fold it into the orzo mixture.
  7. Adjust seasoning with salt and pepper.
  8. Serve warm, garnished with fresh parsley.

Notes

Do not overcook the salmon to keep it tender. Adjust lemon zest according to your preference for brightness. Use fresh garlic for the best flavor.
