Description
A rich and indulgent fettuccine pasta dish topped with plump shrimp and a homemade Alfredo sauce.

- 8 ounces fettuccine pasta
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 1/4 cup unsalted butter
- 1 cup heavy cream
- 1 clove garlic, minced
- 1 1/2 cups freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper. Add shrimp to the skillet in a single layer and cook until pink and opaque, about 2–3 minutes per side. Remove shrimp and set aside.
- In the same skillet, lower heat to medium and add butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the heavy cream and bring to a gentle simmer. Reduce heat to low and gradually add the grated Parmesan cheese, stirring constantly until the sauce becomes smooth and creamy. If the sauce is too thick, add a splash of the reserved pasta water.
- Return the cooked shrimp to the skillet and add the drained fettuccine. Toss gently to coat evenly with the Alfredo sauce. Cook together for an additional 2–3 minutes until everything is heated through.
- Adjust seasoning with salt and pepper. Garnish with chopped parsley and serve immediately.
Notes
Use reserved pasta water to loosen a sauce without diluting flavor. Freshly grated Parmesan melts more smoothly than pre-grated varieties.
