Instructions

  1. Preheat your oven to 350°F (180°C) and grease a loaf pan.
  2. In a large bowl, combine the flour, baking powder, and salt. Whisk to blend.
  3. In another bowl, whisk together the sugar, eggs, oil, lemon juice, and lemon zest.
  4. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined. Avoid overmixing for a lighter texture.
  5. If using, fold in the poppy seeds for a fun crunch.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
