- 4 cod fillets (approximately 1.5 pounds total)
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, finely chopped
- 1 lemon, zested and juiced
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 2 tablespoons olive oil
- Cooking spray or extra olive oil for greasing
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat and lightly grease it.
- Pat the cod fillets dry with paper towels and season with salt and pepper.
- In a shallow bowl, mix together the panko breadcrumbs, Parmesan, parsley, lemon zest, garlic powder, onion powder, and paprika.
- Drizzle olive oil over the breadcrumb mixture and toss to coat.
- Press each cod fillet into the breadcrumb mixture to coat all sides evenly.
- Place coated fillets on the baking sheet, spaced apart.
- Bake for 15–20 minutes, until cod is flaky and the crust is golden brown.
- Remove from the oven, squeeze fresh lemon juice over the top, and serve immediately.
Notes
Store leftovers in an airtight container for up to 3 days. For best results, re-crisp in the oven before serving.
