- 500g Cauliflower (fresh & clean)
- 1 cup Maida (all-purpose flour)
- ¾ cup Cornflour
- 1 tbsp Red Chilli Powder
- Salt (to taste)
- ½ tbsp Garam Masala
- ½ tsp Black Pepper Powder
- 1 tbsp Ginger-Garlic Paste
- Water (as required)
- Breadcrumbs (as required)
- Oil (for frying)
- Tomato Sauce or Mayonnaise (for dipping)
- Fresh Coriander (for garnishing)
Instructions
- Cut the cauliflower into bite-sized florets and set aside.
- In a mixing bowl, combine maida, cornflour, red chilli powder, salt, garam masala, black pepper powder, and ginger-garlic paste to form a smooth batter.
- Gradually add water to achieve a thick consistency—thicker than pancake batter, but not too gloopy.
- Dip each cauliflower floret into the batter, letting the excess drip off, then coat them in breadcrumbs.
- Heat oil in a frying pan over medium heat until it shimmers.
- Fry the coated cauliflower florets until golden brown and crispy, about 5-7 minutes per batch.
- Remove and place them on paper towels to drain excess oil.
- Serve hot with tomato sauce or mayonnaise on the side, garnished with fresh coriander.
Notes
Avoid overmixing the batter and ensure the oil is hot enough before frying for the best results.
