- 1 head cauliflower, cut into florets (about 4–5 cups)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1–2 tablespoons grated Parmesan (optional)
- 1 teaspoon lemon zest or a squeeze of lemon (optional)
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Preheat your oven to 425°F (220°C). Place a rack in the middle or slightly above middle for best browning.
- In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, garlic powder, and smoked paprika until each piece is evenly coated.
- Spread the cauliflower in a single layer on a rimmed baking sheet — don’t overcrowd the pieces; use two sheets if needed.
- Roast in the oven for 25–30 minutes, or until golden brown and crispy, stirring halfway through to promote even browning.
- Serve warm as a side dish or snack. Finish with Parmesan or lemon zest if desired.
Notes
For extra crispiness, broil 1–2 minutes at the end while watching carefully to avoid burning. Store leftovers in an airtight container for 3–4 days.
