A deliciously simple quiche made with fresh zucchini and tomatoes, perfect for any meal of the day.

			- 2 medium zucchinis, grated
 - 2 tomatoes, diced
 - 4 large eggs
 - 1 cup milk
 - 1 cup shredded cheese (e.g., mozzarella or cheddar)
 - 1 onion, diced
 - 2 cloves garlic, minced
 - Salt and pepper, to taste
 - Olive oil, for sautéing
 - Fresh herbs (e.g., basil or parsley), for garnish
 
Instructions
- Preheat the oven to 350°F (175°C).
 - In a skillet, heat a drizzle of olive oil over medium heat. Sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
 - In a large bowl, combine the grated zucchini, diced tomatoes, sautéed onion and garlic, eggs, milk, and shredded cheese.
 - Season with salt and pepper, mixing well until all ingredients are combined.
 - Pour the mixture into a greased baking dish, spreading it evenly.
 - Bake for 30-40 minutes or until set and lightly golden on top. Test for doneness by inserting a knife in the center; it should come out clean.
 - Let it cool slightly before slicing into squares.
 - Garnish with your choice of fresh herbs before serving.
 
Notes
Don’t overmix to keep the quiche light and fluffy. Check for doneness early to prevent overbaking.
