Description

Bright, fresh, and easy to make, these Cucumber and Hummus Bites are the perfect appetizer or snack, combining crunchy cucumber with creamy hummus and fresh herbs.


Ingredients

  • 1 large English or Persian cucumber (about 1012 oz / 300350 g)
  • 1 cup (240 g) hummus (store-bought or homemade)
  • 2 tablespoons fresh dill or parsley, finely chopped (or a mix)
  • Freshly ground black pepper, to taste
  • Flaky sea salt, a pinch for finishing

Instructions

  1. Wash and dry the cucumber thoroughly. If desired, peel stripes for presentation or leave the skin on for color and nutrients.
  2. Slice the cucumber into thick rounds, about 1/3 to 1/2 inch (8–12 mm) thick.
  3. If your hummus is very thick, loosen it with a teaspoon of water or lemon juice and stir gently.
  4. Spoon or pipe a generous dollop (~1 tablespoon) of hummus onto each cucumber slice.
  5. Sprinkle with the chopped fresh herbs, add a small crack of black pepper, and finish each bite with a flake of sea salt.
  6. Arrange on a platter and serve immediately.
