- 1 large English or Persian cucumber (about 10–12 oz / 300–350 g)
- 1 cup (240 g) hummus (store-bought or homemade)
- 2 tablespoons fresh dill or parsley, finely chopped (or a mix)
- Freshly ground black pepper, to taste
- Flaky sea salt, a pinch for finishing
Instructions
- Wash and dry the cucumber thoroughly. If desired, peel stripes for presentation or leave the skin on for color and nutrients.
- Slice the cucumber into thick rounds, about 1/3 to 1/2 inch (8–12 mm) thick.
- If your hummus is very thick, loosen it with a teaspoon of water or lemon juice and stir gently.
- Spoon or pipe a generous dollop (~1 tablespoon) of hummus onto each cucumber slice.
- Sprinkle with the chopped fresh herbs, add a small crack of black pepper, and finish each bite with a flake of sea salt.
- Arrange on a platter and serve immediately.
