Ingredients

  • 4 large eggs, hard-boiled and chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon curry powder
  • 1 tablespoon Dijon mustard
  • 1/4 cup celery, chopped
  • 1/4 cup red onion, chopped
  • Salt and pepper to taste
  • Bread of your choice
  • Lettuce leaves (optional)

Instructions

  1. In a bowl, combine the chopped eggs, mayonnaise, curry powder, and Dijon mustard. Mix until well blended.
  2. Add in the chopped celery and red onion, mixing gently.
  3. Season with salt and pepper to taste.
  4. To assemble the sandwich, spread the egg salad mixture onto a slice of bread, top with lettuce if using, and cover with another slice of bread.
  5. Cut in half and serve.

Notes

Chill the salad for 30 minutes before serving for enhanced flavors. For an extra kick, add a splash of lemon juice or chopped green chilies.
