Ingredients

- 4 large eggs, hard-boiled and chopped
- 1/4 cup mayonnaise
- 1 tablespoon curry powder
- 1 tablespoon Dijon mustard
- 1/4 cup celery, chopped
- 1/4 cup red onion, chopped
- Salt and pepper to taste
- Bread of your choice
- Lettuce leaves (optional)
Instructions
- In a bowl, combine the chopped eggs, mayonnaise, curry powder, and Dijon mustard. Mix until well blended.
- Add in the chopped celery and red onion, mixing gently.
- Season with salt and pepper to taste.
- To assemble the sandwich, spread the egg salad mixture onto a slice of bread, top with lettuce if using, and cover with another slice of bread.
- Cut in half and serve.
Notes
Chill the salad for 30 minutes before serving for enhanced flavors. For an extra kick, add a splash of lemon juice or chopped green chilies.
