Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- Place the chopped dates in a bowl, pour the boiling water over them, and stir in the baking soda. Let the mixture sit for 10 minutes.
- In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Fold the dry ingredients into the butter-sugar-egg mixture until just combined.
- Stir in the soaked date mixture until evenly distributed.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes, then transfer to a wire rack and dust with powdered sugar before serving.
