- 2 cups Medjool dates, pitted
- 1 cup roasted peanuts (salted or unsalted)
- 1 cup dark chocolate chips (or milk chocolate, if preferred)
- 1 tablespoon coconut oil
- Sea salt (for sprinkling, optional)
Instructions
- In a food processor, blend the pitted Medjool dates until they form a sticky paste.
- Line an 8×8 inch square baking dish with parchment paper. Press half of the date mixture evenly into the bottom.
- Spread the roasted peanuts over the date layer. Press the remaining date mixture over the peanuts to create a top layer.
- Place the baking dish in the freezer for about 10 minutes to firm up.
- In a microwave-safe bowl, combine the chocolate chips with coconut oil. Heat in 30-second intervals, stirring until fully melted and smooth.
- Remove the dish from the freezer and cut the mixture into bars. Dip each bar into the melted chocolate until fully coated, then place back on the lined dish.
- Optional: Sprinkle with sea salt, then return to the freezer for an additional 15 minutes to set the chocolate.
- Once the chocolate is firm, slice and enjoy your homemade Date Snickers Bars!
