Ingredients

- 1 cup cornmeal
- 1 cup milk
- 1 egg
- 1 tablespoon sugar
- 1 teaspoon baking powder
- Salt to taste
- Oil for frying
- Butter (for topping)
- Honey (for topping)
- Jam (optional topping)
Instructions
- In a large bowl, mix together the cornmeal, milk, egg, sugar, baking powder, and salt until smooth. Be careful not to overmix.
- Heat about 1/4 inch of oil in a skillet over medium heat. Test the oil with a drop of batter; if it sizzles, you’re good to go!
- Pour a small amount of batter into the skillet to form small patties, about 3 inches wide.
- Fry until golden brown on one side, approximately 3-4 minutes, then flip and continue cooking until browned on the other side.
- Remove from the skillet and drain on paper towels to absorb excess oil.
- Serve warm topped with butter, a drizzle of honey, and jam if desired!
Notes
Adjust the heating of the oil; if it’s too hot, the outside will burn and the inside will remain raw. Check doneness with a toothpick.
