  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder

  • 1/2 cup cocoa powder
  • 1 cup powdered sugar (for icing)
  • 12 tablespoons milk (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and cocoa powder.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  6. Roll the dough into small balls and place them on an ungreased baking sheet, spaced apart.
  7. Flatten each ball slightly with the palm of your hand.
  8. Bake for 10-12 minutes, until set but still soft. They may look slightly underbaked; they will firm up as they cool.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  10. For the icing, mix powdered sugar with 1-2 tablespoons of milk until smooth, then drizzle over the cooled cookies.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. The recipe is easily customizable with optional ingredients like nuts or gluten-free flour.
