- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cocoa powder
- 1 cup powdered sugar (for icing)
- 1–2 tablespoons milk (for icing)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla until well combined.
- In a separate bowl, whisk together the flour, baking powder, salt, and cocoa powder.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
- Roll the dough into small balls and place them on an ungreased baking sheet, spaced apart.
- Flatten each ball slightly with the palm of your hand.
- Bake for 10-12 minutes, until set but still soft. They may look slightly underbaked; they will firm up as they cool.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- For the icing, mix powdered sugar with 1-2 tablespoons of milk until smooth, then drizzle over the cooled cookies.
Notes
Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. The recipe is easily customizable with optional ingredients like nuts or gluten-free flour.
