Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk (or dairy-free substitute)
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • Zest of 1 orange (optional)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp fresh orange juice (or milk, for glaze)
  • Fresh orange slices or berries (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Incorporate vanilla extract and orange zest if using.
  4. In another bowl, whisk together the flour and baking powder. Gradually add this to the wet mixture, alternating with the milk. Mix until combined.
  5. Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While cooling, whisk powdered sugar with fresh orange juice for the glaze.
  7. Once cool, drizzle the glaze over the cake and garnish with fresh orange slices or berries.
  8. Serve and enjoy!

Notes

For a vegan option, use plant-based butter and flaxseed eggs. For a gluten-free version, substitute with almond flour.
