Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a medium mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  3. In another bowl, mix together the pumpkin puree, vegetable oil, egg, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the donuts tender.
  5. Spoon the batter into the prepared donut pan, filling each cavity about halfway to allow room for rising.
  6. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
