Description
Quick and comforting breakfast potatoes that are crispy on the outside and fluffy on the inside, perfect for any morning meal.
Ingredients

- 4 potatoes (cut into 1/2″ cubes – about 600 g total)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 tbsp butter
- 1 tbsp vegetable oil
- 1 tbsp chopped parsley (fresh, or 1/2 tsp dried)
Instructions
- Wash and, if desired, peel the potatoes. Cut into 1/2″ cubes and pat dry.
- (Optional) Parboil the cubed potatoes in boiling salted water for 5–7 minutes, drain well and let steam off.
- Heat a skillet over medium-high heat. Add butter and oil; swirl until melted and foamy.
- Add the potatoes to the skillet in a single layer. Toss briefly to coat and sprinkle with salt, pepper, garlic powder, and onion powder.
- Cover the skillet and let potatoes steam for about 3–4 minutes.
- Remove the lid and cook for 12–18 minutes, turning the potatoes every 2–3 minutes until they are golden and crisp.
- Once done, remove from heat, sprinkle with fresh parsley, and serve immediately.
Notes
Avoid overcrowding the skillet for better browning. Test doneness by piercing with a fork.
