  • 200g rice noodles
  • 200g chicken breast, sliced
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon lime juice
  • 1/4 cup peanuts, crushed
  • Bean sprouts for garnish
  • Lime wedges for serving

Instructions

  1. Soak the rice noodles in warm water for about 30 minutes or until soft. Drain and set aside.
  2. Heat the vegetable oil in a pan over medium heat. Add the minced garlic and sliced chicken, cooking until the chicken is browned and cooked through (about 5-7 minutes).
  3. Push the chicken to one side of the pan, add the eggs, and scramble them until just set, about 1-2 minutes.
  4. Add the soaked noodles, fish sauce, sugar, and lime juice, stirring to combine everything well. Cook for another 3-4 minutes, ensuring the noodles are heated through and coated in sauce.
  5. Toss in the chopped green onions and cook for an additional 2 minutes.
  6. Serve hot, topped with crushed peanuts and bean sprouts, with lime wedges on the side for an extra burst of flavor.

Notes

Avoid overmixing once you add the noodles to maintain their texture. Use fresh ingredients for optimal taste.
