- 8 cassava flour tortillas
- 2 cups shredded cooked chicken
- 1/2 cup diced bell pepper
- 1/3 cup diced red onion
- 1/4 cup avocado oil mayonnaise
- 3 tablespoons fresh lime juice
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (adjust to taste)
- Avocado oil or olive oil spray for skillet
Instructions
- Add all filling ingredients into a large bowl and mix until evenly combined.
- Preheat a skillet over medium heat and spray lightly with oil.
- Warm tortillas in the microwave for 15-20 seconds.
- Fill each warm tortilla with a spoonful of filling and roll tightly.
- Place taquitos seam-side down in the skillet and cook until golden brown, flipping carefully.
- Drain on paper towels if needed and serve warm.
Notes
For a lighter version, bake or air-fry at 400°F for 10-12 minutes. Feel free to customize with optional ingredients like cheese or black beans.
