Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium-high heat.
- Add beef chunks and sear until browned on all sides.
- Remove the beef and set it aside on a plate.
- In the same pot, add onions and garlic, sauté until onions turn translucent.
- Mix in tomato paste, Worcestershire sauce, thyme, and bay leaf.
- Return beef to the pot and pour in the beef broth.
- Bring the mixture to a boil and then reduce heat to low.
- Cover and simmer for 1 hour.
- Add sliced carrots and diced potatoes.
- Continue to simmer for another 30 minutes until vegetables are tender.
- Season with salt and pepper as needed before serving.
- Remove the bay leaf before serving.
