Easy Homemade Beef Stew


Description

A comforting beef stew that warms the soul with tender beef and hearty vegetables simmered to perfection.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add beef chunks and sear until browned on all sides.
  3. Remove the beef and set it aside on a plate.
  4. In the same pot, add onions and garlic, sauté until onions turn translucent.
  5. Mix in tomato paste, Worcestershire sauce, thyme, and bay leaf.
  6. Return beef to the pot and pour in the beef broth.
  7. Bring the mixture to a boil and then reduce heat to low.
  8. Cover and simmer for 1 hour.
  9. Add sliced carrots and diced potatoes.
  10. Continue to simmer for another 30 minutes until vegetables are tender.
  11. Season with salt and pepper as needed before serving.
  12. Remove the bay leaf before serving.

Notes

Serve with fresh parsley and crusty bread. Perfect for cozy meals.
