  • 50g Unsalted Butter or 1/4 Cup Coconut Oil (for dairy-free option)

Instructions

  1. Line a baking tray with well-greased baking parchment paper.
  2. In a large bowl, combine the flaked almonds and shredded coconut.
  3. In a small saucepan over medium heat, combine peanut butter, stevia, and butter or coconut oil. Heat until the butter has melted and the mixture becomes smooth and creamy.
  4. Pour the peanut butter mixture over the almond and coconut mixture, stirring until well combined.
  5. Drop a tablespoon of the soft cookie dough onto the prepared baking tray, repeating to fill the tray in a single layer.
  6. Place the tray into the fridge for a few hours for the cookies to set and harden.
  7. Enjoy the cookies crisp from the fridge, stored in an airtight container.
