Instructions
- Line a baking tray with well-greased baking parchment paper.
- In a large bowl, combine the flaked almonds and shredded coconut.
- In a small saucepan over medium heat, combine peanut butter, stevia, and butter or coconut oil. Heat until the butter has melted and the mixture becomes smooth and creamy.
- Pour the peanut butter mixture over the almond and coconut mixture, stirring until well combined.
- Drop a tablespoon of the soft cookie dough onto the prepared baking tray, repeating to fill the tray in a single layer.
- Place the tray into the fridge for a few hours for the cookies to set and harden.
