Ingredients

  • 1 lb salmon fillet, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped fresh herbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the breadcrumbs, Parmesan cheese, mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper in a mixing bowl.
  3. Cut the salmon into bite-sized pieces and gently fold them into the mixture to coat.
  4. Place the salmon bites on a baking sheet lined with parchment paper.
  5. Bake for 12-15 minutes, or until the salmon is cooked through and the tops are golden brown.
  6. Garnish with fresh herbs before serving, if desired.
