Easy Shepherd’s Pie

Ingredients

  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cups frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 4 cups mashed potatoes
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the ground lamb or beef and cook until browned. Drain excess fat.
  4. Stir in the diced carrots, frozen peas, tomato paste, beef broth, and Worcestershire sauce. Season with salt and pepper. Cook for about 5-7 minutes until the mixture is heated through.
  5. Transfer the meat mixture to a baking dish. Spread the mashed potatoes on top, smoothing it out with a spatula.
  6. Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown.
  7. Let it cool slightly before serving.

Notes

For a lighter option, substitute ground turkey or chicken. For a vegetarian version, use vegetable broth and replace meat with lentils or mushrooms.
