Easy & Tasty Cherry Crumble Bars


Description

Delicious cherry crumble bars with a buttery crust and juicy cherry filling, perfect for any occasion.


Ingredients

  • 2 cups fresh cherries, pitted and halved (about 280300 g)
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar (50 g)
  • 1 teaspoon cornstarch
  • 1 cup all-purpose flour (about 125 g)
  • 1/2 cup rolled oats (about 40 g)
  • 1/2 cup brown sugar, packed (about 100 g)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted (113 g)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch (20×20 cm) baking dish with parchment.
  2. In a medium bowl, combine the cherries, lemon juice, granulated sugar, and cornstarch. Toss gently and set aside.
  3. In a larger bowl, whisk together the flour, rolled oats, brown sugar, baking powder, and salt. Pour in the melted butter and stir until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish.
  5. Spread the cherry mixture evenly over the crust, leaving excess juice in the bowl.
  6. Sprinkle the remaining crumb mixture over the cherries.
  7. Bake for 25–30 minutes, until golden brown and bubbling at the edges.
  8. Allow to cool completely in the pan for 1–2 hours before slicing into bars.

Notes

For a gluten-free version, swap all-purpose flour for a 1:1 gluten-free flour blend. For a vegan option, use melted coconut oil instead of butter.
