Delicious cherry crumble bars with a buttery crust and juicy cherry filling, perfect for any occasion.

- 2 cups fresh cherries, pitted and halved (about 280–300 g)
- 1 tablespoon lemon juice
- 1/4 cup granulated sugar (50 g)
- 1 teaspoon cornstarch
- 1 cup all-purpose flour (about 125 g)
- 1/2 cup rolled oats (about 40 g)
- 1/2 cup brown sugar, packed (about 100 g)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted (113 g)
Instructions
- Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch (20×20 cm) baking dish with parchment.
- In a medium bowl, combine the cherries, lemon juice, granulated sugar, and cornstarch. Toss gently and set aside.
- In a larger bowl, whisk together the flour, rolled oats, brown sugar, baking powder, and salt. Pour in the melted butter and stir until crumbly.
- Press half of the crumb mixture into the bottom of the prepared baking dish.
- Spread the cherry mixture evenly over the crust, leaving excess juice in the bowl.
- Sprinkle the remaining crumb mixture over the cherries.
- Bake for 25–30 minutes, until golden brown and bubbling at the edges.
- Allow to cool completely in the pan for 1–2 hours before slicing into bars.
Notes
For a gluten-free version, swap all-purpose flour for a 1:1 gluten-free flour blend. For a vegan option, use melted coconut oil instead of butter.
