- 1 cup rolled oats
- 1/2 cup nut butter (peanut, almond, or cashew)
- 1/3 cup honey or maple syrup
- 1/2 cup add-ins (chocolate chips, dried fruit, seeds, or nuts)
- 1/4 cup flaxseed meal
Instructions
- In a large bowl, mix together the rolled oats, nut butter, honey (or maple syrup), and flaxseed meal until well combined.
- Stir in your choice of add-ins (chocolate chips, chopped nuts, or dried fruit) until evenly distributed.
- Refrigerate the mixture for about 30 minutes to make it easier to handle.
- Once chilled, scoop and roll the mixture into small balls (about 1-inch in diameter).
- Place the energy balls on a baking sheet and refrigerate again for a few hours until firm.
- Store in an airtight container in the fridge.
