Description
A savory and spicy stir-fry featuring marinated chicken and vibrant vegetables, all enhanced by the rich flavor of gochujang.

- 1 lb boneless skinless chicken thighs, sliced thin
- 1 cup cabbage, chopped
- 1 cup carrots, julienned
- 1 onion, sliced
- 1 cup sweet potato, thinly sliced (optional)
- 2 green onions, chopped
- 2 tablespoons oil (vegetable or sesame)
- 3 tablespoons gochujang (Korean chili paste)
- 1 tablespoon gochugaru (Korean chili flakes)
- 2 tablespoons soy sauce
- 1 tablespoon honey or sugar
Instructions
- Heat the oil in a large pan over medium-high heat.
- Add the sliced chicken thighs and cook until browned and cooked through, about 5-7 minutes.
- Add in the sliced onion, carrots, and chopped cabbage; stir-fry for about 5 minutes until the vegetables are tender-crisp.
- If using, add in sweet potato slices and continue to stir-fry until tender, about 3-4 minutes.
- In a small bowl, mix together the gochujang, gochugaru, soy sauce, and honey/sugar to create the spicy sauce.
- Pour the sauce over the stir-fried ingredients and stir until everything is well coated.
- Cook for an additional 2-3 minutes to heat through.
- Garnish with chopped green onions before serving.
Notes
Keep the heat high to achieve a good sear on the chicken. Avoid overmixing the ingredients when adding the sauce.
