- 1 cup shredded coconut

- 1/4 cup coconut oil, melted

- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the mashed sweet potatoes, shredded coconut, almond flour, honey or maple syrup, melted coconut oil, and eggs. Mix until smooth.
- Add the baking soda, vanilla extract, cinnamon, and salt, and mix well until fully incorporated.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
