Flourless Caribbean Sweet Potato Coconut Bread

  • 1 cup shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the mashed sweet potatoes, shredded coconut, almond flour, honey or maple syrup, melted coconut oil, and eggs. Mix until smooth.
  3. Add the baking soda, vanilla extract, cinnamon, and salt, and mix well until fully incorporated.
  4. Pour the batter into the prepared loaf pan and smooth the top.
  5. Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
