Flourless Cinnamon Swirl Banana Bread

  • 3 ripe bananas
  • 3 eggs
  • 1 cup almond butter
  • 1/2 cup rolled oats (gluten-free if needed)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup (optional)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the bananas until smooth in a large bowl.
  3. Add the eggs, almond butter, oats, baking soda, cinnamon, vanilla extract, and maple syrup into the mashed bananas and mix until well combined.
  4. Pour half of the batter into the prepared loaf pan.
  5. For the swirl, sprinkle some cinnamon and a bit of maple syrup if desired, then add the remaining batter on top.
  6. Use a knife to swirl the batter gently for a marbled effect.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
