- 3 ripe bananas
- 3 eggs
- 1 cup almond butter
- 1/2 cup rolled oats (gluten-free if needed)
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/4 cup maple syrup (optional)
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mash the bananas until smooth in a large bowl.
- Add the eggs, almond butter, oats, baking soda, cinnamon, vanilla extract, and maple syrup into the mashed bananas and mix until well combined.
- Pour half of the batter into the prepared loaf pan.
- For the swirl, sprinkle some cinnamon and a bit of maple syrup if desired, then add the remaining batter on top.
- Use a knife to swirl the batter gently for a marbled effect.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
