Description

These light and satisfying tortilla roll ups are filled with colorful fresh vegetables and a creamy herbed filling, making them perfect for brunch, picnics, or parties.

  • 8 small (8-inch) flour tortillas
  • 8 oz (226 g) reduced-fat cream cheese, softened
  • 2 tbsp plain Greek yogurt (optional)
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh chives (or green onions)
  • 1 cup shredded carrots (about 128 g)
  • 1 cup thinly sliced cucumber, seeds removed (about 100120 g)
  • 1/2 cup finely diced red bell pepper (about 75 g)
  • 1/2 cup shredded romaine or butter lettuce (about 25 g)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a bowl, mix softened cream cheese, Greek yogurt (if using), lemon juice, and chives until smooth. Season lightly with salt and pepper.
  2. Shred carrots, thinly slice cucumber, dice bell pepper, and shred lettuce. Pat cucumber slices dry if necessary.
  3. Spread 2-3 tablespoons of the cream cheese mixture on each tortilla, leaving a 1/2-inch border.
  4. Layer shredded carrots, cucumber slices, bell pepper, and lettuce on top of the cream cheese mixture.
  5. Roll the tortilla tightly, ensuring the seam is on the bottom.
  6. For cleaner slices, wrap each roll in plastic wrap and refrigerate for 15-30 minutes.
  7. Slice each roll into 6-8 pieces and serve immediately or keep chilled until serving.
