- 8 small (8-inch) flour tortillas
- 8 oz (226 g) reduced-fat cream cheese, softened
- 2 tbsp plain Greek yogurt (optional)
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh chives (or green onions)
- 1 cup shredded carrots (about 128 g)
- 1 cup thinly sliced cucumber, seeds removed (about 100–120 g)
- 1/2 cup finely diced red bell pepper (about 75 g)
- 1/2 cup shredded romaine or butter lettuce (about 25 g)
- Salt and freshly ground black pepper, to taste
Instructions
- In a bowl, mix softened cream cheese, Greek yogurt (if using), lemon juice, and chives until smooth. Season lightly with salt and pepper.
- Shred carrots, thinly slice cucumber, dice bell pepper, and shred lettuce. Pat cucumber slices dry if necessary.
- Spread 2-3 tablespoons of the cream cheese mixture on each tortilla, leaving a 1/2-inch border.
- Layer shredded carrots, cucumber slices, bell pepper, and lettuce on top of the cream cheese mixture.
- Roll the tortilla tightly, ensuring the seam is on the bottom.
- For cleaner slices, wrap each roll in plastic wrap and refrigerate for 15-30 minutes.
- Slice each roll into 6-8 pieces and serve immediately or keep chilled until serving.
