- 4 ounces prosciutto, diced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- Oil for frying
- Salt and pepper, to taste

Instructions
- Cook the Tortellini: Start by boiling the tortellini according to package instructions. Drain and set aside to cool slightly.
- Crisp the Prosciutto: In a skillet, cook the diced prosciutto over medium heat until crispy, about 5-7 minutes.
- Prepare the Coating: In a shallow bowl, beat the eggs. In another bowl, mix the breadcrumbs with Parmesan, salt, and pepper.
- Coat the Tortellini: Dip each tortellini first in the beaten eggs, allowing the excess to drip off, then coat it with the breadcrumb mixture until well covered.
- Heat the Oil: In a frying pan, heat oil over medium-high heat (about 350°F) until shimmering.
- Fry the Tortellini: Carefully add the coated tortellini in small batches. Fry until golden brown and crispy, about 3-4 minutes, then turn to cook evenly.
- Drain and Serve: Remove the fried tortellini and drain on paper towels. Serve warm, garnished with fresh herbs if desired.
Notes
For extra flavor, use herbs or spices in the breadcrumb mixture. Leftover tortellini can be used in salads.
