- 2 cups all-purpose flour
- 1 ¾ cups granulated sugar
- ½ cup unsweetened cocoa powder
- 1 ½ tsp baking powder

- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup heavy whipping cream
- 1 cup chocolate ganache
- 1 cup granulated sugar (for glaze)
- ½ cup sweetened condensed milk
- ½ cup water (for glaze)
- 1 cup dark chocolate (chips or chopped)
- 2 ½ tsp gelatin powder
- ⅓ cup cold water (for blooming)
- Food coloring (blue, purple, and white)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix for 2 minutes on medium speed until smooth.
- Stir in boiling water carefully. Divide the batter equally between prepared pans.
- Bake for 30-35 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a wire rack.
- Prepare the filling by whipping the heavy cream until stiff peaks form, then fold in chocolate ganache. Slice each cooled cake layer in half horizontally for four layers.
- Stack the layers with filling in between, then refrigerate for at least one hour to set.
- To make the mirror glaze, heat sugar, sweetened condensed milk, and water until dissolved. Stir in dark chocolate until melted.
- Bloom gelatin in cold water for 5-10 minutes, then add to the chocolate mixture and mix until dissolved.
- Divide and color the glaze as desired. Cool slightly, then pour over the cake on a cooling rack. Let excess glaze drip off, then set for 10 minutes before slicing.
