- 1 lb baby potatoes, halved
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- Parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet over medium heat, melt 2 tablespoons of butter. Add the garlic and sauté until fragrant, about 1-2 minutes.
- Add the chicken bites, season with salt, pepper, and Italian seasoning, and cook until golden brown, approximately 6-8 minutes.
- Stir in the heavy cream and Parmesan cheese, allowing the sauce to thicken, about 3-4 minutes.
- In a separate baking dish, toss the halved potatoes with the remaining butter, salt, and pepper.
- Bake the potatoes for about 25-30 minutes until golden and tender.
- Remove the potatoes from the oven and sprinkle the shredded cheese on top, returning them to bake for an additional 5 minutes until the cheese is bubbly.
- Serve the chicken bites with the Parmesan cream sauce over the cheesy roasted potatoes, garnished with parsley.
