- 3–4 boneless, skinless chicken breasts (about 1.5 lb / ~680 g), trimmed
- 4 cloves fresh garlic, minced
- 4 tablespoons unsalted butter, divided
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped (plus extra for garnish)
- Salt and freshly ground black pepper, to taste
- Juice of 1 lemon (about 1–2 tablespoons)
Instructions
- Pat chicken breasts dry and cut into 1–1.5 inch bite-sized pieces. Season with salt and pepper.
- Place a large skillet over medium heat. Add 1 tablespoon of butter and olive oil. Heat until shimmering.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add chicken pieces in a single layer and cook undisturbed for 2–3 minutes. Stir and continue cooking until browned and cooked through, about 6–8 minutes.
- Reduce heat to low. Stir in remaining 3 tablespoons of butter, lemon juice, and chopped parsley. Toss to coat the chicken.
- Check seasoning and adjust with additional salt, pepper, or lemon as desired.
- Plate and serve hot.
Notes
Use less butter or a butter/olive oil blend to reduce saturated fat. Adjust for specific ingredient brands or portion sizes.
