Garlic Butter Chicken Bites


Description

Tender, golden-edged chicken pieces in a garlic butter sauce, perfect for quick weeknight dinners or cozy weekend lunches.

  • 34 boneless, skinless chicken breasts (about 1.5 lb / ~680 g), trimmed
  • 4 cloves fresh garlic, minced
  • 4 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (plus extra for garnish)
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon (about 12 tablespoons)

Instructions

  1. Pat chicken breasts dry and cut into 1–1.5 inch bite-sized pieces. Season with salt and pepper.
  2. Place a large skillet over medium heat. Add 1 tablespoon of butter and olive oil. Heat until shimmering.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add chicken pieces in a single layer and cook undisturbed for 2–3 minutes. Stir and continue cooking until browned and cooked through, about 6–8 minutes.
  5. Reduce heat to low. Stir in remaining 3 tablespoons of butter, lemon juice, and chopped parsley. Toss to coat the chicken.
  6. Check seasoning and adjust with additional salt, pepper, or lemon as desired.
  7. Plate and serve hot.

Notes

Use less butter or a butter/olive oil blend to reduce saturated fat. Adjust for specific ingredient brands or portion sizes.
