  • 1 lb chicken breast, diced
  • 8 oz mushrooms, sliced
  • 1 cup wild rice
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onions and minced garlic, sauté until translucent (about 5 minutes).
  2. Add the diced chicken breasts to the pot, cooking until browned on all sides (approximately 6-8 minutes).
  3. Stir in the sliced mushrooms and cook until they are softened (around 4-5 minutes).
  4. Add the wild rice and chicken broth, bringing it to a boil.
  5. Reduce heat to low, cover, and let simmer until the rice is cooked through (about 45 minutes).
  6. Once the rice is tender, pour in the heavy cream and grated Parmesan cheese, stirring until melted and combined.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
