  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream the butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in key lime juice, zest, and vanilla.
  6. Gradually add the dry ingredients, mixing until just combined—be careful not to overmix!
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before serving if desired.

Notes

For added texture, consider adding chopped nuts or shredded coconut. Store in an airtight container at room temperature for up to 3 days.
