Gingerbread Cookie Bars


Description

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt until well blended.
  3. In a separate bowl, cream the softened butter and brown sugar together until light and fluffy.
  4. Add the molasses, egg, and vanilla extract to the butter mixture, mixing until fully combined.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be cautious not to overmix.
  6. Spread the batter evenly into the prepared baking pan using a spatula.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan before cutting into bars.

Notes

Store cooled bars in an airtight container at room temperature for up to 3 days. Freeze for up to 3 months for longer storage.
