  • 1 1/2 cups (180g) gluten-free all-purpose flour blend
  • 1 teaspoon xanthan gum (omit if your flour blend contains it)
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 cup (240ml) warm milk (dairy or non-dairy)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 large egg whites

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the gluten-free flour, xanthan gum (if using), salt, and sugar until well combined.
  3. In a separate small bowl, dissolve the active dry yeast in warm milk and let it stand for about 5 minutes until it becomes foamy.
  4. Pour the yeast mixture along with olive oil, apple cider vinegar, and egg whites into the dry ingredients.
  5. Blend on medium speed until the mixture is fully incorporated and smooth, about 3-4 minutes.
  6. Pour the batter into a greased loaf pan, smoothing the top with a spatula.
  7. Cover the loaf pan with a clean kitchen towel and let it rise in a warm place for 30-45 minutes, or until the batter has doubled in size.
  8. Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For extra flavor, consider adding herbs or seeds. Use an instant-read thermometer to check doneness.
