- 1 pound (about 454 g) boneless, skinless chicken breast, diced into 1-inch pieces
- 1 cup gluten-free breadcrumbs
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste
- 1 large egg, beaten
- Olive oil for frying or 1 tablespoon olive oil to drizzle if baking
- Marinara sauce, for dipping (optional)
Instructions
- Preheat the oven to 400°F (200°C) if baking. If frying, heat 1/4 inch of neutral oil in a heavy skillet over medium-high heat until shimmering.
- In a medium bowl, combine gluten-free breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, and a pinch of salt and pepper. Mix well.
- Place the beaten egg in a shallow dish. Dip each piece of diced chicken into the egg, letting excess drip off, then press into the breadcrumb mixture until well coated.
- For baking: arrange coated bites on a baking sheet lined with parchment. Drizzle 1 tablespoon olive oil over the bites. Bake for 15–20 minutes, flipping halfway through, until golden brown and the chicken reaches an internal temperature of 165°F (74°C).
- For frying: add coated chicken bites to hot oil in a single layer; cook about 2–3 minutes per side until golden and cooked through, then transfer to a paper towel-lined plate to drain.
- Serve immediately with warm marinara sauce for dipping.
Notes
For a crispy exterior, don’t overcrowd the baking sheet or frying pan. Use an instant-read thermometer to check doneness.
