- 1/2 cup salted butter, softened
- 2/3 cup applesauce
- 2 eggs
- 1 cup white sugar
- 2 tsp vanilla extract
- 1 cup almond flour
- 1 1/4 cup oat flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp salted butter, melted
- 1 tbsp oat flour
- 2 tbsp white sugar
- 1/2 tbsp cinnamon
- 1/4 cup salted butter, slightly softened
- 1/4 cup light brown sugar
- 1/4 cup almond flour
- 1/2 cup oat flour
- 2 tsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter, applesauce, eggs, sugar, and vanilla extract. Mix until smooth.
- Gradually add the almond flour, oat flour, baking powder, and salt. Stir until fully combined.
- In a separate bowl, mix the melted butter, oat flour, white sugar, and cinnamon to create the cinnamon filling.
- In another bowl, blend the room-temperature butter, brown sugar, almond flour, oat flour, and cinnamon to form a crumbly topping.
- Grease or line an 8×8 baking dish. Pour half of the cake batter into the dish and spread evenly.
- Sprinkle half of the cinnamon filling over the batter and swirl it lightly.
- Add the remaining cake batter and spread evenly again. Top with the remaining cinnamon filling and swirl gently.
- Bake for 25 minutes.
- Remove from the oven and sprinkle the crumble topping over the top, gently pressing it into the cake.
- Bake for an additional 18 minutes or until golden brown.
- Let cool completely before cutting into squares.
Notes
Ensure not to overmix the batter for a light texture. Store leftovers in an airtight container for up to 3 days.
